Vegan Carrot Muffins

Ingredients: 1/2 C raisins, 1 C sugar, 1-1/2 C flour, 1 tsp cinnamon, 1 carrot grated

1 tsp baking soda, 1 tsp baking powder, 1 tsp vanilla, 1/2 tsp salt, 3/4 C oil, 2 Tblsp ground flax

Egg replacement (replaces 2 eggs) 2 Tblsp Ground Flax and 6 Tblsp of water

Cover raisins in hot water; let cool and drain

Mix all the ingredients together, adding the ground flax mixture last

preheat oven to 375F

Scoop out mixture and place into silicone muffin containers.

Bake for 15 - 20 minutes

Let cool and then you’re done! Enjoy :)
